Figure 8 Chocolate Protein Bars

Here it is ladies! I'm actually giving you a 1/2 recipe because this is perfect for an 8x8 pan and these bars go a LONG WAY! These should probably freeze well too...need to try that! Enjoy!

1 c natural peanut butter
7/8 c honey
1 1/8 c Chocolate Go Easy! Protein powder
1 1/2 c dry uncooked oatmeal

*** for more fiber, add 1/8 c Go Anywhere! Fiber Booster and do only 1 c Protein powder
  • In a microwave-safe bowl, combine peanut butter and honey, heat in microwave for 70-90 seconds, until it easily stirs
  • Add Protein powder and oatmeal (and optional fiber), and mix thoroughly. It will be thick.
  • Press into an 8x8 pan. (I actually line the pan with wax paper or plastic wrap to make it easier to remove.)
  • Refrigerate for 1 hour or until solid enough to cut into bars. (I found it easier to cut when I took out of pan and put on cutting board.)
  • Wrap each bar in foil or plastic wrap and store in refrigerator
  • Makes 16 (2x2") bars.

Note: cut bars into 1" square pieces for a nice snack with about 50 calories - it really is satisfying!
